I am a foodie, but I am not good with cooking. I can manage some simple cooking, for the elaborate ones I always have to look into my recipe books. I prefer quick cooking or one pot cooking, which saves a lot of time. So, let me share my go to recipes for a quick meal.
Toor Dal: The simplest of dals. Wash some dal and keep aside. In a cooker, add little oil, once hot, add cumin seeds (jeera), then add some chopped onions, fry till translucent. Throw in some chopped chillies, fry. Put in chopped tomatoes, fry till mushy. Now add the dal, water, turmeric power and chilli powder. Wait until three whistles. Let the cooker cool down naturally. Voila! It is ready to be served with some piping hot rice.
Aloo Bhath (potato and rice): This dish is my comfort food. It is a ‘lazy person’s meal. Wash some rice and keep aside. Wash the potatoes and cut into half (do not peel the skin). Now, in a cooker add the rice, water and the potatoes. Cook until 2- 3 whistles. Let the cooker cool. Once cool, remove the potatoes, peel and smash them. In a plate, take some rice, add the smashed potatoes, ghee and salt. Simple yet quite potent in taste.
Tomato Rasam or Saar: In a cooker add water, chopped tomatoes, chopped green chillies, sliced onions, peeled and chopped garlic, coriander leaves, salt, chilli powder or pepper powder, turmeric powder and small piece of tamarind. Cook until 2-3 whistles. The tomato is ready to be savoured as soup or with some rice.
