1 tbsp vegetable oil
2 medium tomatoes
1 medium onion
2-4 cloves garlic (minced)
1-inch ginger (minced)
1 tsp turmeric powder
1 tsp coriander powder
1-2 tsp garam masala
1 tsp red chilli powder
2 tbsp coriander (chopped)
Salt as per taste
How To Make Black urad dal
1. First, rinse the black urad dal in water 2 to 3 times. Soak it in a dish of water for 30 to 40 minutes. You can also soak it overnight for 4 to 5 hours. And set it away.
2. Heat 2 tbsp oil in a pressure cooker over low heat. Stir in the cumin seeds. When they begin to sear and crackle, add the chopped onions.
3. Fry the onions on a low heat until they get light brown. Mix in the chopped tomatoes, ginger, and garlic.
4. Stir in the coriander powder, turmeric powder, red chilli powder, and garam masala powder. Stir thoroughly.
5. Cook the masala, stirring frequently, on a moderate to medium-low heat until the oil begins to separate at the sides. Make sure your masala doesn’t burn while you’re mixing it.
6. Finally, add the drained black urad dal, 3 cups of water, and salt to taste. And then thoroughly mix it again.
7. In a pressure cooker, cook the dal for five whistles (or more if not adequately cooked) over medium to medium-high heat, or until the lentils are soft, tender, and totally cooked.
8. Cook and simmer until the mixture is creamy. This helps to thicken the dal’s consistency.
9. When the dal is finished, garnish with coriander leaves. Serve immediately with rice or roti.
