Telangana formed as the 29th State of India, and came into being on 2014. Among one of the beautiful states, Telangana has gained importance. Though it is formed as a new state there were political slugfest aginst formation of state, however the state was formed.
Telangana is growing as rich state with varied culture. The people of the state have good taste towards food, there are varieties of mouth-watering dishes among them one is Malidalu Laddu. Malida is a traditional sweet prepared on special occasions.
Malida Laddu, commonly known as Malidalu is a classic Telangana sweet dish which is a combination of chapathi, jaggery and dry fruits mixed together and made into a wonderful Laddu. This sweet delicacy is extremely flavorful, and rich to taste. The combination of chapati and jaggery turns into a wonderful Laddu.
Ingredients:
→Chapati pieces 1 cup.
→ Cashew nuts
→ Pistachio
→ Badam
→ Fennel powder
→ Cardamom powder
→ Dates (chopped).
→ Jaggery 1 cup.
→ Ghee as required.
Making of Laddu:
*Knead the dough just like chapati. Keep it aside for 15 minutes, then divide the portions and roll it with the help of rolling pin
*Lightly roast the roti powder in ghee. Heat a heavy bottomed pan on low heat and melt the ghee. Add in the Roti powder and stir well.
*Cook the chapati by adding ghee on both sides. The reason we roast on low heat, is so that it becomes crisp slightly and the heat also helps in binding the remaining ingredients to make the malida. Malida would be little sticky while making balls but the jaggery will get hard and hold shape once it rests for a few minutes.
*Now grind these chapatis in a blender to make a coarse powder.
*In a mixing bowl add blended chapati mixture and add nuts powder (cashew nuts, pistachio, badam) chopped dates, fennel powder, cardamom powder, grated jaggery, ghee and mix it well to make laddus.
*Serve the Malida as a teatime snack or as a healthy lunch box snack for kids. This sweet is packed with nutrition and goodness that you can have it as a quick energy booster for those long workdays.
You can also make laddos and store these as anytime desserts. To make this dish, you can also use leftover rotis.
