Jharkhand is a beautiful state with rich varied culture. It’s known for its waterfalls, the elegant Jain temples of Parasnath Hill and the elephants and tigers of Betla National Park. The state capital of Ranchi is a gateway to the park.
Apart from this the foods of Jharkhand is also very famous. One of the famous dish of state is ‘Til Barfi’.
Til or sesame seeds have a ‘garam taseer’ which is why they are widely consumed during the chilly winter season. Til not only keeps you warm but also boosts your immunity.
Til barfi is a sweet dish and the pride of Jharkhand and is exclusively prepared during the festival of Makar Sankranti. The state takes great pride in Til Barfi as one of its most scrumptious and nutritive delicacies. Since it is so loved by the locals, it is prepared on other occasions also. It is also the signature dessert of Jharkhand. It is prepared using sugar and sesame seeds and served with water.
INGREDIENTS OF TIL BARFI
Heavy cream
Milk powder
Sesame seeds
Sugar
Powdered green cardamom
HOW TO MAKE TIL BARFI
Step 1: Roast Sesame Seeds
Roast sesame seeds over medium heat till they are golden in colour. This should take about 3-4 minutes. Keep aside. Don’t over roast the sesame seeds else they turn bitter in taste
Step-2: Cook The Cream And Milk Powder
In a frying pan add heavy cream and milk powder mix it well. Cook over medium-high heat, stir continuously till the mixture starts to bubble. Now lower the heat to medium and keep stirring and scraping the sides and bottom of the pan, until the mixture is reduced to a thick paste and starts coming together. This should take 10 minutes.
Step-3: Mix In Sugar And Sesame Seeds
Add roasted sesame seeds and mix well. Stir for another 2-3 minutes until the mixture starts looking like a soft dough. Lower the heat to low and add sugar and cardamom powder and mix it well. The mixture will become soft in texture after adding sugar. Keep stirring for 1-2 minutes and bring the burfi back to dough texture.Add nuts of your choice to give the barfis a crunchy texture.
Step-4: Cut The Barfis And Serve
Now spread barfi mixture onto the greased plate, approximately ½ inch thick. Let it sit for 1-2 hours at room temperature. Now cut in square or diamond shapes and serve.
Store the Barfi in any air tight container and relish eating for up to 1 month whenever you crave for something sweet.
